Yes. - Is the name of the dish need to provide beforehand?
Yes, please provide that on/before September 9. - Portion of the meat seems a bit?
Exceed ingredients will only count for “central market” ingredients (side ingredients) main ingredients will not be consider as point deduction. - How many contestants will be participating per section?
Each section will have 10 – 11 contestants. - Melon Baller, Garnishing Knives, cling film, aluminum foil or similar of those equipment, is that possible for contestant to bring their own?
Contestant can bring their own garnishing set; other equipment like cling film, aluminum foil & melon baller, we will provide at the contest. - For vermicelli, there is dried one & soaked one?
There will be 2 kind of vermicelli available at the contest. - Rice wine is that similar as Japanese “Sake”?
It is the Chinese “double distilled” cooking wine. - scallops (immersed, steamed): Does it refer to the “ready to used”?
